5 Pit Boss Smoker Recipes for Beginners and Experts (2022)

Smoking is a traditional way of cooking meat recipes as it maintains the color and juiciness of the meat. Pit Boss Smoker Recipes

1. Smoked Chicken

Smoked Chicken


  • 5 pounds of a whole chicken
  • Applewood chunks
  • Salt to taste
  • 1 TBSP onion powder
  • 1 TBSP garlic powder
  • 1 TBSP smoked paprika
  • 1 TBSP chili powder
  • 1 TBSP Brown Sugar

Instructions For Cutting The Chicken

  • Take the whole chicken and remove the neck and the innards with the help of a sharp knife and a cutting board.
  • Place the chicken with the breasts facing towards you and cut in half. Now pull apart the breasts so you can see the inside of the chicken.

Cooking The Chicken

  • In a medium-sized bowl, add all the dry ingredients and thoroughly mix them with a spoon to create a rub for the chicken.
  • Now take a small amount of the rub in your fingers and rub it all over the chicken. Make sure to rub the ingredients on the inside of the chicken as well.
  • After marinating the chicken, it must be left in the refrigerator overnight for the spices to soak in. So, take a dish, put the marinated chicken in it, and place inside the refrigerator.
  • Now for preparing the smoker, take a bowl and place the Applewood chunks in it and soak them for 24 hours. Soaking the wood chunks will make them burn longer and hence produce more smoke.
  • Take the soaked chunks and place them in the wood pan.
  • Wrap the chunks in aluminum foil and make holes in the aluminum sheet with a knife. This is an optional step, and it produces more smoke.
  • Preheat the Pit Boss smoker to 255 degrees and wait for about 30 minutes.
  • Take a pan and place the chicken in it, or you can use the smoker rack. Now place the food pan in the smoker and cook for about 4.5 hours.
  • In case you are using wood chips, you must check on them every 2 hours to make sure they are not burnt and refill the wood pan with more chips.
  • Make sure that the temperature of the chicken is 165 degrees by inserting a thermometer inside the thigh.
  • Once cooked, take out the chicken from the Pit Boss smoker and allow it to cool for 15 minutes. Cut the chicken on a platter and serve.

2. Smoked Chicken Thighs

Smoked Chicken Thighs


  • 3 pounds chicken thighs (8 pieces in total)
  • 1 TBSP salt
  • 1 TBSP paprika
  • ¼ cup brown sugar
  • 1 TBSP garlic powder
  • 1 TBSP onion powder
  • 1 TBSP black pepper powder

Cooking Instructions

  • Add all the dry ingredients to a large bowl and thoroughly mix them together. Now place it aside.
  • To prepare the Pit boss smoker, add wood chips in the wood pan of the smoker.
  • Preheat the smoker to 250F and wait till it has reached the required temperature.
  • In the meantime, one by one, take the chicken thighs and brush them with olive oil.
  • Now it is time to use the spice rub and coat the thighs with the prepared spice mix. You must let the rubbed thighs rest for a while so that they can absorb all the different spice flavors.
  • Take the thighs with the help of tongs and place them on the smoker rack.
  • Let it cook for about 2 hours. When the cooking process reaches its end, insert a thermometer inside the thigh and check the temperature. It should be 165F.
  • Take out the thighs and let them sit for 15 minutes before serving.

3. Smoked Beef Brisket

  • 12 pounds beef brisket
  • 2 TBSP salt
  • 1 TBSP black pepper
  • 1 TBSP garlic powder

Cooking Instructions

  • Buying quality meat is very important when cooking the perfect brisket. Select the meat which has the right amount of fat content in it.
  • You can either get trimmed brisket or a whole brisket that must be trimmed properly. If you have time, then go for a whole brisket that you can trim at home.
  • Now take a small bowl and add all the spices to it. Mix the spices to prepare a spice rub for the brisket.
  • Sprinkle the spices on the brisket and rub them in. Set it aside for a while.
  • Preheat the smoker to 275 and place large wood chunks inside the Pit Boss smoker.
  • Take an aluminum foil sheet and wrap the seasoned brisket with the foil.
  • Now place the brisket on the smoker rack.
  • Smoke the brisket for 5 hours at 225F. Check the temperature of the brisket by inserting a thermometer. Make sure that the temperature of the brisket is 165F.
  • Take out the brisket from the smoker and let it rest for some time for all the juices to settle in.
  • Slice the cooked brisket finely and serve the brisket slices to your guests

4. Smoked Salmon


Smoked Salmon
  • 4 pounds of salmon
  • ¼ cup of salt
  • 1 cup brown sugar
  • 1 cup Water
  • 1 TBSP onion powder
  • 1 TBSP garlic powder

Cooking Instructions

  • For preparing the brine, take a large glass pan and pour water and all the brine ingredients, and mix it well to dissolve the salt.
  • Wash the salmon and make sure it does not have any bones.
  • Place the salmon in the brine pan and refrigerate it for 4 hours. Do not let the salmon stay in the refrigerator overnight.
  • Take the salmon out of the brine and pat it with a dry cloth or paper to remove the brine water.
  • Now it is time to smoke the salmon in the Pit Boss smoker. Place alder wood chips in the wood pan of the smoker and wait till the temperature reaches 225F.
  • Put the salmon fillets with the skin facing down in the cooking tray that is wrapped in aluminum foil, and place this tray inside the smoker.
  • Smoke the salmon for 6 hours at 255F.
  • Check the temperature of the salmon with a thermometer. If the temperature of the salmon has reached 140F, then take out the salmon and turn off the smoker.
  • Set aside the salmon for 5 minutes so that the excessive heat settles down.
  • Cut the smoked salmon in slices and serve to your family.

5. Smoked Mac And Cheese

Smoked Mac And Cheese


  • 1 large pack of macaroni
  • ¼ cup all-purpose flour
  • 1 TBSP salt
  • 1 block of cream cheese
  • ½ TBSP black pepper
  • 1 block gouda cheese
  • 1 block cheddar cheese
  • 3 cups of milk
  • ¼ cup butter

Cooking Instructions

  • Take a large cooking pot and boil salted water in it. Then empty the macaroni package inside the boiling water and let it cook for a while.
  • Take out the macaroni once cooked, do not let it become mushy and too soft.
  • Preheat the Pit Boss smoker to 255F and add applewood chips to the wood tray.
  • In the meantime, take a cast-iron skillet and add ¼ cup of butter to it. Melt this butter over medium heat and stir it with a whisk.
  • When the butter is completely melted, add ¼ cup of all-purpose flour to the skillet and continually whisk it so that there are no clumps in the mixture. Make a fine smooth paste of the butter and the flour.
  • Now add 3 cups of milk to the paste and bring the mixture to a boil with constant stirring. The sauce will thicken, and it will reach a smooth texture.
  • Once the sauce starts to thicken, add cream cheese and stir it continuously to mix the cheese. Break down the cheese clumps that may be present in the sauce with constant stirring till you are left with a smooth sauce.
  • Turn off the burner as the sauce is now fully cooked. Add 1 block of cheddar and gouda cheese, respectively, to the sauce in the skillet and stir the mixture.
  • Now it is finally time to add the boiled elbow macaroni in the sauce and fold it gently so that it does not break.
  • Take the skillet and put it inside the preheated smoker. The boiled macaroni is supposed to be a bit hard so that it can fully cook inside the smoker. In this way, it won’t be overcooked after the smoking process.
  • Let the macaroni and cheese cook for an hour inside the smoker at 225 degrees.
  • Take out the mac n cheese from the smoker and serve.
